Dean Street Townhouse  Once home to great British artist William Hogarth , and later, as The Gargoyle a regular spot for Fred Astaire and later, Francis Bacon , this destination comes courtesy of the Soho House Group. It has the feel of a private-members-club dining room (the lounge is at left) but the fare is billed as authentic English, with comfort food should it be required — such as mince and potatoes, a dish of people of a certain age’s childhood. There’s also twice-baked smoked haddock souffle or a spring vegetable salad offered with a host of accompaniments such as chicory, pear, walnut and Barkham blue cheese or perhaps Cerney Goats cheese. 3. Polpetto  With an intimate dining room that only seats 28 and a policy of not taking reservations for dinner, it is perhaps surprising this Italian eaterie has emerged one of the hottest tickets in town. At lunchtime when reservations are allowed, this place — located in the heart of Soho — buzzes with conversations about pilots, movie projects, sales and financing as well as the levels of legal fees that might accompany them. The menu consists of small plates and classic Venetian osteria dishes. And prices aren't eye-watering for mouth-watering eats. St. John Hotel  An address right in the heart of London's west end and an underarm stone's throw from the location for world premiere after world premiere, this hotel and its restaurant, set up by Trevor Gulliver and architect-turned-chef Fergus Henderson , is geared up to be the next big thing. Only opening in the spring of this year on the site of seafood restaurant institution Manzi's, which closed after 60 years selling shellfish and such, the St. John Hotel is a 24-hour operation. Its room service boasts a real chef offering a real service from the kitchen.

Prepare vegetables. Cut meat into chunks, put in a large pan and cook on high power until brown. Add the cut onion and let it brown. Next add the cut pepper and put a lid on the pan. Quick, easy, precise – I can do that. Use the Dolmio sauce instead of the tinned tomatoes this time to get rid of it. Ignore the garlic this time too – I bet you there’s garlic somewhere in the sauce. In fact, Italians don’t add it as indiscriminately as we do.

BOLOGNESE SAUCE

Enough for spaghetti for 2

INGREDIENTS

2 cloves of garlic Ground pepper to taste

METHOD

Peel the garlic and chop it into tiny pieces. Peel the onions and chop them into tiny pieces.

Put the oil into a frying pan on a medium heat. Add the garlic and onion. Fry the garlic and onion for about 2 minutes. Stir frequently to stop it sticking.

Put the meat into the pan and fry for 2 to 3 minutes, stirring all the time. By this time, it should have broken up and be an even colour, with no pink bits.

Open the tin of tomatoes. Pour the juice into the pan. Chop the tomatoes while they are still in the can (it’s easier than chasing them around the pan).

Pour the chopped tomatoes into the pan. Crumble the stock cube into the pan. Add the herbs. Season with the pepper. Mix thoroughly. Continue to cook, stirring as the mixture boils, until the sauce has reduced.

ADDITIONS & ALTERNATIVES

Use minced lamb, pork or turkey instead of minced beef.

Serve with grated Parmesan cheese.

TIPS

Always “take the pasta to the sauce”. Put the cooked pasta in the pan with the sauce and stir together until thoroughly coated.

* Plum tomatoes can be used either whole or chopped. It is difficult to stick chopped tomatoes back together again if you need to use them whole.
